[NMLUG] character sets and terminal head aches

I have a file from a client that includes curly-quotes and such from an
extended character set. My xterm here in the office shows them just fine
in vim and less, but my Red Hat box at Rackspace "blows up" on them as
control codes.
What do I need to set/change to allow me to use the text as is without
having to dig out the curly quotes and such?
