The forward/back/etc. buttons on the toolbar are controlled by the GTK
theme, so that's the only way to change those. That means you can't do
it just in Nautilus - it'll be changed in any GTK app that has the same
forward/back/etc. buttons on a toolbar.
The "icon theme" chooses the icon for the folders etc.[1]
